Do you think an Irishman would get sick if I fed him 15 year old aged cheddar cheese?

Should I get him a bottle of red wine, some fancy crackers and this 15 year old cheddar cheese? Do you think it would make him sick? The oldest cheddar cheese I’ve eaten was 5-6 years old and I thought it was amazing. I am curious about a 15 year old aged cheddar cheese, but I’m afraid that it might taste like a dead person’s armpit.

The cheese sells for $50 per pound. Do you think if it were $100 or $200 per pound it would sell out right away, because people would assume that it was more special and rare than it is?

Can you microwave halloumi (cheese)?

I’ve only fried my halloumi or done it on the BBQ - hope the "comment" will help - give it a bash, I wouldn’t do it for too long in the micro though

Is there lactose in aged cheese?

My roommate is lactose sensitive and does not think there is lactose in aged cheese. I disagree and would like to find out who is right. Do cheeses such as aged cheddar contain Lactic acid?

Lactose and Lactic Acid are two different things.
Lactose is sugar coming from milk.
Some of the lactose will processed by the bacteria, but not all of it. It will ferment.
The bitter-sweet taste of cheese is caused by lactose. If it didn’t have any, the cheese wouldn’t be palatable.

Much like alcohol, the more the cheese ages, the less lactose there is. One can see that in eating say cheddar, the older the cheddar the more tart it it and less "sweet". But there will always be a tad of lactose into it. I guess it depends on the level of intolerance of the person.

I cannot express to you how much I love halloumi cheese. If you could take mind-blowing sex and translate it into cheese, it would be halloumi cheese.

I am not recommending that you have sex with halloumi cheese, however.

Does Cheese Taste Really Better Or It Doesn’t Make Different If It Aged?

For a 1-2 Years Aged Sharp Cheddar, does it really make a different in taste or is it just similar as what you get from the grocery store that are NOT aged.

just like wine cheese does taste better with age. It develops its flavors more. Its texture will change too-the key is to get it when the taste and texture are ideal but it is a matter or preference. Try an aged cheddar and compare it to the store brand and the national brands and see for yourself….the extra cheese will keep or you can shred it and use it on eggs or in mac n cheese. The good thing is you can’t go wrong either way and even an inexpensive cheese has its uses.

I was mailed 3 yr aged cheddar cheese. Do I refridgerate this?


Yes. Once you open the packaging, you need to preserve its moisture, aged cheese or not.
If it is a huge ball of cheese, I like to cut it in portions , individually wrap it in aluminum foil into ziplock bags, and freeze it. However, if you are a cheese eating family, it will be gone and consumed in days so dont bother to do that, just put it in the fridge.

I’ve been given a huge slice of delicious aged goats cheese. As its aged its a hard cheese and doesn’t have any ash or anything on the outside.

I’ve grated some into scrambled eggs (which was delicious!) and used some on a cheese platter but I still have some left and am unsure of what else to do with it. Any suggestions how you’ve used this cheese would be greatly appreciated.
Thanks but aged goats cheese doesn’t come in logs. That is fresh goats cheese which has a different texture. It has a colour similar to a good parmesan but doesn’t have a crumbly texture.

The flavour is also much stronger than with fresh goats cheese.

you are on the right track with it so far. use it in a pasta dish next, maybe a pasta primavera with a white sauce, or make a quiche or frittata.
